Bacalhau Gomes Sá

2 lbs salted boneless bacalhau (soaked) (cod fish )
2 onions sliced half moon
1 bell pepper sliced ( red, yellow or both)
3 tbsp garlic chopped
½ cup parsley chopped
1 cup green onions chopped
6 hard boil eggs sliced
3 large carrots boiled
4 lbs golden potatoes boiled
1 tbsp wine vinegar
¼ tsp salt
Portuguese olive oil to drizzle
3 tbsp olive oil
1 cup bacalhau water (boiled water from cooking bacalhau)

In a large skillet, add olive oil, onion and salt. Cook until the onions are translucent. Add bell peppers, garlic,pepper sauce, vinegar and parsley. Blend everything well together. Add bacalhau, water and cook everything for about 3 minutes to blend all the flavors. Taste for salt. Sliced potatoes about ½ inches thickness, slice carrots, slice eggs, and slice olives. Put all these aside. In a large ovenproof dish drizzle some of the Portuguese olive oil, lay a layer of the potatoes, layer of the bacalhau and layer of carrots. Lay some of the eggs and olives, finishing with a drizzle of Portuguese olive oil. Repeat as many layers as you would like. Finishing with a good drizzle of olive oil. Cover with aluminum foil and bake it at 350 for about 35-40 minutes or until warmed through.
