Elspeth Feldman (The Speedy Vegan) and Caileigh Feldman

Elspeth Feldman, also known as The Speedy Vegan, is an author, educator and cooking instructor who regularly teaches classes demonstrating the ease of preparing fabulous plant-based meals that are “delicious, nutritious, fresh and fast.”

She is Director of Culinary Arts at Vegan News Daily and oversees the publication’s test kitchen and online cooking series.

Her first recipe-book, “Pardon My Turkey,” is a fun yet practical guide to creating your very own, plant-based, whole-foods feast for one of our favorite American holidays – Thanksgiving. She is also a publisher who shares tasty recipes on her site at: www.TheSpeedyVegan.com. Her second recipe-book, “Meals & Mocktails in May,” was designed for a three-part interactive vegan cooking series on Vegan News Daily, called the Dinner Club.

Elspeth was born and raised on a dairy farm in the southern African country of Zimbabwe. She has traveled extensively, having lived in England, Greece and Australia, before settling down on the East Coast of the USA with her husband, Paul, of 30 years. In her cooking, she brings a distinctively global context to her creations and loves to turn classic meat-based meals into fabulous vegan creations.
Caileigh Feldman is a recognized wellness expert, global entrepreneur, certified yoga instructor, acclaimed raw vegan chef and Content and Marketing Manager for the rapidly growing, plant-focused publication, Vegan News Daily.com.

A resident of Boston, where she lives with her husband, Brian, Caileigh previously served as the Executive Director of Marketing and Communications for international yoga retreat company, Give Joy a Chance, where she built and oversaw global operations.

Feldman has been vegan for more than eight years and is passionate about the profound benefits of veganism for the health of all people, the animals with whom we share the planet and the overall environment.

Feldman is an honors graduate of Haverford College with a B.A. in Anthropology, an award-winning filmmaker, a musician, and an accomplished athlete. Her goal is powerful: “I want to show that veganism is fun, easy, healthy and delicious! Further, my mission is to make Vegan News Daily the premiere source for plant-based news!”

Most recently, both Elspeth and Caileigh Feldman are partnering on two exciting ventures:

Entitled “Kitchen Takeover,” it begins on July 7th and runs through August 11th and will provide a fun, safe, interactive way for teens aged 12-18 to learn new, plant-based cooking skills, hangout with like-minded peers and prepare delicious, healthy meals like a vegan pro.
