PEAS N' GRITS, STEAMED HOG FISH, BAKED MACARONI & CHEESE AND COLE SLAW | BAHAMIAN COOKING
Seasoning for fish
1/2 lime
Garlic salt to taste
Red Pepper Flakes
1 Tbsp. Mrs. Dash Seasoning
1 Tbsp. thyme
1/2 med. onion
1/4 med. bell pepper
1 celery stalk
1 garlic clove
Gravy for fish
2 Tbs. oil
1 1/2 cups water
Herbs from the seasoning
2 Tbsp. tomato paste
Browning
*Allow gravy to boil for about 5 minutes on medium heat before adding fish. Once fish is added, turn temperature down to low with the lid on the pot.
Baked Macaroni and Cheese
1/4 med. bell pepper
1/4 med. onion
1 garlic clove
Garlic Salt to taste
1/4 block butter
red pepper flakes
1/2 tin evaporated milk
4 eggs
2 lbs. cheddar cheese
1 Pkt. Velveeta cheese
pam spray
paprika
*Allow macaroni to bake for about 25 to 30 minutes or until the edges are golden brown.
Pigeon Peas N' Grits
3 Tbsp. oil
1/2 med. onion
1/2 med. bell pepper
1 celery stalk

3 Tbsp. tomato paste
2 Tbsp. browning
4 cups grits
6 - 7 cups water
red pepper flakes
garlic salt and table salt to taste
1 cup pigeon peas
Slaw
1/4 head lg. cabbage
1/2 med carrot
1/2 celery stalk
1/2 lime
dash of sugar
2 Tbsp. Hellman's Mayonnaise
