Ginger Red Dates Tea 姜枣茶

This is a nourishing and pleasant drink for women, and is good for removing "cold" or 寒 from the body. Quick and easy to prepare. Takes no more than 10 minutes to get all ingredients ready. Brew for 15 min and it's ready to drink! Note this should be consumed in the daytime and not at night.

The following is good for 4 cups:
1. Water - about 1.8 litres
2. Ginger - palm size (remove skin and slice)
3. Red Dates/ Jujubes - 8 to 10 medium sized (remove seeds)
4. Dried Longan - 20 pieces
5. Brown Sugar or Demerara Sugar - 1 tablespoon

Brown sugar is added because of its beneficial properties, it helps to nourish the blood, expel wind and disperse "cold" in the body.

Ginger is "neutral" in nature, ie. neither cooling nor heaty. However, as this drink serves to remove "cold" from the body, we need to remove the skin as the skin has cooling properties.
