CONFINEMENT FOOD: SWEETEN BLACK VINEGAR WITH PORK KNUCKLES/TROTTERS

Hello Verybody
Today I will showing you how to make a CONFINEMENT FOOD.
It is called SWEET BLACK VINEGAR WITH PORK KNUCKES/TROTTERS.
This dish is cooked for new mothers. This Dish is eaten throughout the 30-40days of CONFINEMENT. Mostly eaten after 10-12 days birth of a child. It is eaten during Confinement is to help the new mothers to keep her body warm.
After going through the loss of body natural heat during birth which cause unbalance ying-yang new mothers are inner body and loss of inner energy is very strained.
But for people who are suffering from aches and pain in joints and pain of arthritis this will warm the body and will improve the aches and pains.
It is also said to be good for the body during wet and damp weather to prevent coldness in the body and aches and pain.
My version is a simple method.
Give it a try.!!

Step 1
In a pot of boiling water enough to cover the pork knuckles or trotters with
3 slices of ginger
1 /2 scallion
Boil for 5 minutes. Remove the Pork knuckles/trotters.
Wash it, scarp off all hairs and other unwanted dirt.
Place it aside

Step 2
In a Clay pot (if possible) otherwise use a cast iron pot coated with enamel .Mix the Sweeten Black Vinegar Sauce
500ml Sweeten Black Vinegar
100ml normal black Vinegar
20-30ml Caramelised Dark soya Sauce
and 500ml or more Water to be added later. Set aside.

Step 3
150gms Ginger (old/matured) skinned remove and smashed
Heat a wok or pan and dry fry the ginger till brownish specks outside
and then add 2 tbsp Sesame Oil
add
20-30ml Glutinous Rice Wine(you can add more your option)
Stir fry shortly and pour it into the Sweeten Black Vinegar .
Set aside.

Step 4
Clean the precooked pork knuckles/trotters and add to the Sweeten Black Vinegar mixture. Make sure the Mixture cover the pork Knuckles/trotters. Increase by adding the 500ml water or more.
Bring to a boil, keep boiling with covered lid at medium low heat for 1 1/2 hours to 2 hours toll pork knuckles are really Soft. Check and stir to Make sure the sauce cover the Pork Knuckles all the time.

Step 5
After 2 hours add the *5 hard boiled eggs shell removed.
Boil a further 10-15 minutes to let the egg soak in the Sweeten Black Vinegar.

Step 6.
Lastly add a little salt to taste and sugar if necessary. But since the Sweeten Black Vinegar is sweet I don't think you need to add sugar.
But it is your dish your taste. This dish is sweet adding a punch of salt helps to bring out the sweetness.
You can now serve your ready cooked SWEETEN BLACK VINEGAR WITH PORK KNUCKLES/TROTTERS with SPECIAL CONFINEMENT RICE.(RECIPE TO FOLLOW SOON)

Step 7
The remaining sauce will be used over a long period of 30-40 days till confinement is over.
All you have to do is keep the sauce and add more Sweeten Black Vinegar, Water, Wine and pre fried ginger, Pork Knuckles and hard boiled eggs and cook as above. Whatever is left over, just reheat and eat with fresh cooked confinement rice.

*Hard Boiled Eggs left overnight in the Sweeten Black Vinegar Sauce will cause the eggs to become abit rubbery. Thats normal.
