✨ Peanut Butter Mushroom Ramen ✨
For all the Ramen recipes, we've seen- this one is a healthier and a much tastier version of the noodle dish! It's creamy, spicy with a flavourful crunch from the veggies!
Recipe:
Ingredients:
- 1 tbsp olive oil
- 3 cloves garlic, chopped
- 1 tbsp ginger, chopped
- 1 cup sliced mushrooms
- 1 Boy Choy
- 1 cup crumbled extra firm tofu
- 2 tbsp peanut butter
- 1.5 cups vegetable broth
- 1 portion Udon/Ramen noodles boiled as per packet instructions.
Sauce:
Mix the following:
- 2 tbsp light soy sauce
- 1 tbsp jaggery
- 1 tsp rice wine vinegar
- 1 tsp sesame oil
Garnish:
- Toasted white sesame seeds
- Chopped birds eye chilli
- Fresh chopped green onions
- Chilli oil
- Crushed roasted peanuts
Instructions:
1. In a pan over medium heat, drizzle olive oil and add ginger, garlic and mushrooms. Sauté for 3-4 minutes.
2. Add Bok Choy leaves and the crumbled tofu. Sauté for 5 minutes.
3. Add the peanut butter followed by the vegetable stock. Stir and deglaze the pan.
4. When the broth comes to a boil, simmer on medium heat and add the sauce mix. Simmer for 2-3 minutes. Taste for seasonings.
5. Pour the broth into the serving bowl followed by the strained noodles.
6. Top the ramen with crushed roasted peanuts, fresh chopped onion onion, chilli oil, roasted white sesame seeds and chopped birds eye chill.
7. Serve Warm.
🍜 You can use veggies of your choice to add colour and crunch to the dish.
🍜 You can also use instant Maggi stock cubes if you don't have it Frozen or pre made.
🍜 You can replace peanut butter with tahini for a nutty and creamy flavour!
🍜 Instead of chill oil, you can use chilli crisps. You can find the recipe for the same on the feed!
