Ayam taliwang, a type of grilled spicy chicken in Lombok, Indonesia, is one of my favorite types of grilled chicken in the world.

We just landed in Mataram, Lombok, and for dinner we walked over to Ayam Taliwang Irama, close to the hotel that we stayed at, and known for their ayam taliwang. It was absolutely spectacular, using village free range chickens, grilled and lathered in exquisitely spicy sauce. This is one of the best reasons to come and visit Lombok island, Indonesia!
