Toshikoshi Soba or New Year’s Eve Noodles (づ*ᴗ͈ˬᴗ͈)づ*☆

This is a Japanese new year tradition to symbolize long life and prosperity, to break off from the last year and to be strong (like buckwheat, which the noodles are made of).

It’s usually a very simple dish, sometimes the noodles are enjoyed purely with broth and scallions. To make mine vegan, I used vegan dashi (recipe on the blog) and garnished with grated daikon, scallions, wakame and togarashi. I also used cha soba because.. why not start the year with green tea!

Now that my grandparents are getting older, I realize how lucky I was as the oldest in the family to experience all of the traditions while my grandparents were still young and willing to prepare them. It has become a mission of mine to learn as much as I can from them while I can.
