Korean Rice Cake Soup (떡국)

Korean Rice Cake Soup (떡국) is one of my all time favourite Korean recipes. It’s kind of like the Korean equivalent of chicken noodle soup in my book—perfect for rainy days, when you’re feeling under the weather or just in need of something warm and comforting.

It’s easily made vegan and I meant to re-post this recipe for seollal this year but… better late then never!

Also—I do not recommend the Trader Joe’s rice cakes for this recipe. I bought them to try them out and they start to tear and fall apart. If you have a local Korean or Asian grocery store near you, highly recommend purchasing there instead!
