How to Prepare and Clean Sausage Casing (Episode 17)
Before you use natural sausage casing, you’ll need to rinse each piece of casing. Natural sausage casing comes in a salt brine that helps preserve it. Your task is to separate each piece of casing and flush each piece with water. We’ll show you how.

Equipment
1 hank of sausage casing (creates about 100-120 pounds of sausage)
Steps for Preparing and Cleaning Sausage Casing
1. Carefully open the package of casing. Slice open only the package, not the casing.
2. Remove a section of casing from the pack and place it into a sink with water.
3. Look for the ring that holds a knot of casing for one section. Unknot the casing from the ring.
4. Pull one piece of casing from the section.
5. Pull the end of a piece of casing over the spigot of the faucet. Flush the piece of casing with water. Keep one hand on the faucet, holding the casing. The other hand should help the casing keep from becoming tangled in the water.
6. When the entire casing has been filled, carefully detach the casing from the faucet, keeping the end pointed in the sink, and allow the casing to completely empty.
7. Store the casing in a bowl of water until you are ready to use it.
