WOW! Have we got a treat for you! Who doesn`t like tiramisu, well this is even better! Tiramisu biscuits layered with a mascarpone whip (tiramisu cream) and then coated in a chocolate ganache! Decadent, delicious and one of the best biscuits you will ever, ever taste. Trust us, they will not last long! These chocolate coated savoiardi (tiramisu) biscuits are to die for. They are a small dessert in themselves. Here we have used the larger type of biscuit but you can use the smaller one if you prefer. We have placed a video on here before filling savoiardi biscuits but we did it again, and topped them a little differently. Please have a go at making them because you will not be sorry! INGREDIENTS:

1 x 500gram packet of savoiardi (lady finger ) biscuits
300ml x fresh cream
250grams x mascarpone cheese
2 x tablespoons marsala
3 x tablespoons caster sugar
1 x 200gram block of dark cooking chocolate
extra cream
icing sugar for dusting
METHOD:

--place cream, mascarpone, marsala and sugar into a large deep bowl
-beat ingredients together until cream becomes thick with soft peaks and all sugar is dissolved
-once cream is mixed place in fridge to stay chilled
-place a biscuit on it`s side on a chopping board and using a bread knife slice slowly straight through the middle of biscuit making two halves and then place top back on biscuit and repeat till all biscuits are done
-remove cream mixture from fridge
-taking one biscuit at a time lift the top off the biscuit and spread a generous amount of cream on the bottom half of the biscuit
-place top of biscuit back to sandwich the biscuit together.
-repeat till all biscuits have been complete
-place biscuits back in fridge for at least 20 minutes
-take chocolate, break and place in bowl and melt in microwave at 20 second intervals
-once chocolate is melted place in a small rectangle baking dish so you can coat the biscuits
-place one side of biscuit down, flip over and dip other side of biscuit till reaching desired affect
-place biscuit on wire rack or tray lined with baking paper
-once all biscuits are complete, allow to cool and place in fridge
--dust with icing sugar just before serving. Enjoy!

NB: you may not have enough chocolate for this amount of biscuits if you just want to add melted chocolate. If you want to make a ganache (it will also give you more mix for coating) see recipe below
MAKING A GANACHE

Combine chocolate and cream in a heatproof bowl over a saucepan of simmering water. Stir with a metal spoon until smooth. Remove bowl from heat.
Set aside at room temperature to cool, stirring occasionally, until ganache is thick and spreadable. Spread over both sides of biscuits and set aside to cool.
Another tip: You can melt chocolate as described above and add fresh cream to the warm chocolate mix till desired affect prior to dipping. This is more messier but you will have lots of fun licking your fingers!
