Healthy Beetroot Paneer Roll
Hey!
I hope you are doing well.
So, today we are making rolls with all the ingredients that are very dear to each and every Indian mum!
And this is my version of making it healthy and fun to eat at the same time. I hope you will like it!
Servings - 2
Ingredients-
For the filling-
100 gms Paneer, diced, पनीर
1/2 cup sweet corn kernels
1/2 cup button mushroom(optional)
For paste-
Salt to taste, नमक स्वादानुसार
1 tbsp Mayonnaise , मेयोनिज
1/2 Hung Curd , टंगा हुआ दही
Salt to taste, नमक स्वादानुसार
1 tsp Ginger-Garlic paste , अदरक लहसुन का पेस्ट
1 tbsp Tomato ketchup, टाॅमेटो केचप
1 tbsp Coriander leaves, chopped धनिया पत्ता
1 tsp Dried Oregano, सुखा ओरिगैनो
1. Pour oil and let it heat.
2. Saute diced paneer, corn, and mushroom for 3 minutes.
3. On low heat add the paste mix and cook on medium to low heat for 4minutes.
For Pickled Veggies -

In a saucepan add bay leaf, garlic, salt, sugar, water, and vinegar and boil it for 15 minutes on low flame, switch off the flames and remove to a bowl.
Then add the carrots, beetroot, cucumber, and green chilies mix once and keep aside for further use or until at least 5-6 hours.
For dough -
2 cups wheat flour
Pinch of salt
Beetroot puree- dice one medium-sized beetroot, add to a blender, pour 2tbsp of water, and blend.
Pour the puree into flour and knead.
Add water as desired .
Make a paratha or roti.
Spread-
Mix mayonnaise, coriander leaves , garlic paste and sprinkle oregano and chilli flake
For Assembling -
Apply the spread, add the cooked paneer and corn mix, pickled veggies, sliced onions, cucumber , carrot , radish and tomatoes to the roti.
Wrap it up and enjoy!
