The DIRT Man wants to personally thank Todd for sharing this recipe and being a part of the video. I also want to thank John Greene the owner of Greene's Family Butcher in Kingsville Maryland. The ribs he got me were fantastic. John and his staff are a pleasure to work with. You can also get my Todd's DIRT Seasoning and Marinades in his store.

Recipe
Butcher
Go see your favorite butcher in your area and ask him for Plate Ribs. Or a nice set of beef ribs. This might take the butcher a few days to get, so buy your ribs days before you are planning on making this.

Prep
Open up the packaging of the ribs. inspect the ribs fat on top of the ribs. You want to leave some fat on top, but not too much. Definitely get rid of any fat that is thick.

Take Olive Oil and put enough on the ribs for the Rub to stick. Put a heavy coat of Salty Sailor all over the ribs top and sides.

Grill
Set up your grill for indirect cooking. Lite the grill and soak some Pecan chunks in water for 30 minutes. Set up the grill to cook the ribs at 250-275 degrees.

BBQing
1) Once the grill is up to temp. You want to put the Pecan chunks onto the coals. If you have a gas grill you will use Chips and make a pouch using tin foil, and put on the burner.
2) Put a water pan and put the grate on. Place the meat on the cooking grates. Smoke for four hours at 250-275 degrees.
3) Take the Ribs off the grill after 4 hours.

Sous Vide
1) Cut the ribs into pieces that will fit in the bag.
2) Vacuum seal the bag twice to make sure the bag does not leak.
3) Turn on the Sous Vide machine and set the temp to 145 degrees.
4) Put the bags in the water and make sure they are completely submerged in the water. Like we show, clip the bags to the racks.
5) Will take 24 to 40 hours depending on the size of the ribs.

Time to Eat
Take the bags out and open them up and take out the ribs. Be very careful because their is a lot of juice that will pour out of the bag. Plate the ribs and enjoy one of the best meat dinners you will ever have.
