EASY SAUTEED SPINACH | FULL INSTRUCTIONS AND RECIPE

This recipe for Sautéed Spinach is one that I learned many years ago from my old friend, Chef Frank Davis. It's simple but yet so delicious.
So let's dive into the recipe now.
INGREDIENTS
8 pressed down cups fresh spinach. Stems removed.
1 medium onion chopped
4 Toes garlic minced
salt and pepper to taste
1 Tbsp. butter
1 Tbsp. Bacon fat
1 Tsp. Olive Oil
White Wine 3 Tbsp.

INSTRUCTIONS
First you'll want to spend some time snipping off the spinach stems. Unless you're ok with stems. Once you have that done and your onions and garlic are chopped, heat a 10"-12" skillet. Melt some butter, olive oil and bacon fat all together. Add in the chopped onion and sauté it until the onions get browned or caramelized. It's the caramelization that makes the onion so sweet. Add your garlic and start adding in the spinach a handful at a time.
Fold the spinach over and over with tongs grabbing up as much onion and garlic as you can. Continue adding spinach as the spinach cooks down. Splash in some white wine and finish up the job!
The spinach can be served immediately or set off to the side and served as needed.
Pair this recipe with some Alice Springs Chicken or any good steak, chicken pork or beef recipe.
