CHICKEN PICCATA WITH CAPERS AND LEMON BUTTER SAUCE

INGREDIENTS
Salted butter
Capers
White Wine We use a Chardonnay for cooking
3 lemons
2 chicken breasts
All purpose flour
EVOO Olive Oil
1 Tbsp. Salt
1 Tbsp. Pepper
1 Tbsp. Granulated garlic
1 Tbsp. Granulated onion
1 Tbsp. Fancy Paprika
Fresh Italian flat leaf parsley
INSTRUCTIONS
In a bowl mix salt pepper garlic onion and paprika.
Slice the chicken breasts into cutlet size pieces
Flatten them a bit with a meat tenderizer
Season both sides of the chicken cutlets with the seasoning blend.
Dredge or shake on flour on both sides of the chicken.
In a large skillet over a medium high heat, melt 3 TBSP of butter with about the same in olive oil. Be careful not to over heat and burn your butter.
Brown off your cutlets on both sides. When the second side is close to being browned, add a cup or more of white wine and squeeze the juice of 2 lemons over the chicken.
Use the third lemon to cut slices to garnish. But you do want to put them in the skillet when cooking the chicken.
Add more wine if necessary.
Also, add in 3 tablespoons of capers. The liquid is a bit salty but it's ok to get some in your skillet.
Now, slide that entire skillet into a 350°F oven for 15 minutes.
When you remove that skillet from the oven, place it back on the burner over a medium-high heat, remove the chicken and add 2-3 tablespoons of butter.
Move the skillet back and forth to allow the butter to melt and thicken the sauce.
When the sauce reduces enough and comes together as a nice thicker sauce, you're ready to serve.
It's really that easy to make a great serving of Chicken Piccata.

Chef Notes: Serve with a side of grilled ZUCCHINI and SQUASH and also a side of ROASTED RED POTATOES.
