MINESTRONE SOUP WITH ITALIAN SAUSAGE | VERY GOOD
As I said in my video, this soup is my version of a Minestrone Soup.
I made it a couple of times and decided it was time to make a video.
My mother who is 95 years old said, "this is the best soup ever"!
So there it is, the best soup!
I know it's a twist on Minestrone but it's delicious.

INGREDIENTS
¾ head of cabbage coarse cut
1 large white onion coarse cut
½ red onion coarse cut
½ bunch kale chopped
6 toes garlic sliced
3 ribs celery chopped
1 cup carrot sticks or 2 carrots chopped
1 bag fresh cut green beans cut into bite size pieces
3 16 ounce cans pinto beans drained and rinsed
12 cups chicken stock
7-8 Cups Alta Cucina Plum Tomatoes
2 Tbsp. Italian Seasoning Blend
1 Tbsp. Oregano
¼ cup fresh basil
3-4 Tbsp. EVOO extra virgin olive oil
1-2 pounds Italian Sausage
2 Medium size Russet potatoes peeled and cut into small cubes
1 ½ cups Ditalini Pasta
INSTRUCTIONS
In a large pot, add olive oil enough to coat the bottom of the pot, then sauté the onions, celery and garlic for a few minutes.
Add in the Italian sausage and brown that off while chopping it up and blending it with the veggies.
Providing you’ve cut up all your veggies, add in the Kale, cabbage, green beans, pinto beans, basil and plum tomatoes. Mix all this together even while the pot is on medium high heat.
Now add in the Italian seasonings and oregano followed up with the chicken stock.
Stir it around a bit.
Add in your salt to your taste. I deliberately did not add pepper because two of my family members are allergic to black pepper so I decided not to add it in. Otherwise, add black pepper too. To Taste!
Last, add in your cut potatoes. Stir it one last time and bring it all back to a boil.
Once you see those bubbles coming to the top, cover the pot and simmer for 1 hour or more.
I let mine simmer for 2 hours but it didn’t make it any better.
In the meantime, boil the Ditalini Pasta for 9 minutes and drain.
When the soup is ready, add in all the pasta and stir it in well.
Serve while hot with some saltine crackers.
