Khachapuri - Georgian (the country) cheesy bread | ხაჭაპური | Хачапури

After years in Georgia, I consider myself something of a khachapuri expert. I want to share with you what I think is the best version of Imeretian khachapuri, as well as give you some insight into Georgian culture. Not only is this video a great introduction to Georgia, but to baking itself by being accessible to bakers of all skill levels. So, check out how, with just a few simple ingredients, you can make something really amazing.

Pour yourself a glass or two of wine and get ready to coat your kitchen in flour, because we're gonna make some khachapuri!

Ingredients:

540 grams of flour (plus more for dusting)
200 grams of warm water
150 grams of scalded milk
3 eggs
300 grams of melty cheese (preferably sulguni)
a glug of olive oil
4 grams of yeast
butter
salt
NOTE: Typical Imeretian khachapuri uses a very bitter, firm, and salty Imeretian cheese. It doesn't melt as well and can have a bit of a vinegary aftertaste. So we are going to sub it in for the most popular of all Georgian cheeses, sulguni!
