Bukayo Pie with Skyflakes Crust

Ingredients:
10 packs skyflakes
1 cup butter
3 tbsp white sugar
1 tsp salt
1/2 cup water
7 semi-mature coconuts worth of meat (grated)
brown sugar 700g
2 cups coconut milk
1 cup walnuts (chopped)
1 tsp salt
Cornstarch as needed
Water as needed
1.5 cups peacan nuts
3/4 cup sugar
3/4 cup water
Procedure:
1. Pound the crackers until almost fine. Add melted butter, sugar, salt, and water. Force on a pie tin evenly. Freeze until needed
2. In a pot, add the coconut meat, brown sugar, coconut milk, walnuts, salt, and enough water to cover the meat. Cook for 1 hour on low heat or until almost all of the liquid has evaporated.
3.Dissolve cornstarch in water and add it to the mixture while vigorously stirring. The consistency you are looking for is stiff but spreadable.
4. Retrieve the crust from the freezer. Spread an even but thick layer of your sweetened coconut filling on the crust. Arrange peacans on top as desired.
5. heat up 3/4 cups of sugar and water in a pot. Bring to a boil and reduce a little bit. Spread this hot mixture on top of the pie. Use a silicon brush to evenly spread it.
6. Let firm up in the freezer or chiller.
7. Before serving, torch the top of the pie so that the sugar slightly melts and caramelizes.
8. Serve with coffee on a cold afternoon.
(makes 2 8-inch pies)
TIPS:
1. To get a better glaze, don't reduce the sugar and water too much.
