The PERFECT Buko Pie Recipe
Ingredients:
Buko pie filling
3 cans (net wt. 1.7 kg) young coconut meat, drained.
1 cup coconut milk
1 cup condensed milk
½ cup water
4 tbsp cornstarch
⅛ tsp salt
1 tsp vanilla extract
Buko pie dough
300 g All purpose flour
8 tbsp chilled unsalted butter, diced
65 g chilled vegetable shortening, chopped
6 tbsp cold water
1 tsp Himalayan pink or sea salt
Buko pie eggwash
1 whole egg
1 egg yolk
1 tbsp fresh whole milk
Demerara or turbinado cane sugar for the topping (optional)
Note:
Use 9” pie plate
