watermelon
"so delicious" vanilla coconut yogurt
lunch:
sushi
avocado, green onion, + vegan buffalo dippers
sauce is coconut + liquid aminos
dinner:
taquitos
filling–
bell peppers
onion
black beans
pinto beans
brown rice
salsa
spices I used for filing:
salt
pepper
chili powder
garlic powder
onion powder
coconut sugar
smoke paprika
nutritional yeast
shells– "siete" almond flour shells
cheese– "violife" mozzarella + cheddar cheese (shreds)
roll taquitos as directed in video. bake for 15-17 mins at 400 degrees f.
topped with lettuce and vegan sour cream. by :tofutti" sometimes I also dip them in chipotle sauce by "bitchin"

Sustainability is so important to me. One of the most impactful ways (besides eating plant based) is thrifting. The fashion industry is one of the most wasteful industries of all. Do good by shopping second hand and/or donating the things you no longer need to thrift shops.
