👩🏽‍🍳 Colourful Carrot & Celery Soup

Ingredients:
- 500gr carrots
- 3 leeks
- 1 bulb fennel, stalks removed
- 1 medium stalk of celery
- 8 medium potatoes
- 1 - 1.5 L water
- 3 TBSP extra virgin olive oil to cook
- 1 TBSP salt

1. Add carrots, leeks, fennel, celery, potatoes, olive oil, water and salt to pot. Bring to a boil, lower heat, cover, and simmer for 30 minutes, until veggies are tender. Remove from heat.
2. Blend everything until very smooth.
3. Serve soup into bowls, top with some roasted cashews and almonds and protein of choice (ground beef in my case).
4. Enjoy!
