How to Cook Fennel with Chicken Thighs Italian Style

This juicy braised chicken thigh recipe with fennel and tomatoes is super easy and so good! This recipe will show you how to prepare fennel in a simple and delicious way. All you need is a bunch of boneless skinless chicken thighs, cherry tomatoes, fennel, and a few other readily available ingredients to make this easy Italian chicken recipe! I hope you enjoy it!

CHICKEN THIGHS WITH FENNEL AND TOMATOES
INGREDIENTS
3-4 pounds boneless skinless chicken thighs
1 large fennel bulb and fronds - sliced
1 medium onion - sliced
4 cloves garlic - minced
32 ounces cherry tomatoes
½ cup dry white wine
Salt and pepper to taste
½ cup olive oil - divided

INSTRUCTIONS
1. Season chicken thighs aggressively with salt and pepper on both sides.
2. Heat a large pan to medium heat and coat with a couple tablespoons of olive oil. Pat chicken pieces dry right before placing into the pan making sure not to overcrowd. Sear ~3 minutes per side and set chicken pieces aside. Work in batches.
3. To the same pan add in the fennel and cook for 1 minute. If the pan is dry add a bit more olive oil. Add in the onions and garlic and cook for 2-3 minutes longer.
4. Turn heat to high and add in the wine. With a wooden spoon scrape the bottom of the pan to remove all the brown bits. Boil for 3 minutes then turn off the heat.
5. Coat a large roasting pan with a couple of tablespoons of olive oil. Place all the fennel into the pan, then the chicken and cherry tomatoes. Sprinkle the fennel fronds on top and drizzle a couple more tablespoons of olive oil all over.
6. Braise the chicken thighs at 325f for 45-60 minutes or until the internal temperature of the chicken reaches 165f. The chicken can be broiled for the last 2-3 minutes if desired to crisp it up on top. Enjoy!

NOTE:
- An Instant-Read thermometer is a great kitchen tool to have. Use it to check the chicken for the exact temp!
