The No. 1 Family Style ITALIAN CHICKEN RECIPE!
Chicken Scarpariello is an amazing Italian-American chicken dish. It has seared chicken (thighs are great for this recipe), roasted potatoes, Italian sausage, and vinegar peppers all in flavorful vinegar, white wine, and chicken stock sauce. The sauce is super tangy, sticky, and most importantly super delicious! I hope you enjoy this Italian chicken, potatoes, and sausage with vinegar recipe!

INGREDIENTS:
▪3 pounds skin-on chicken thighs
▪1 pound sweet Italian sausage
▪2 pounds potatoes - cut into bite-size pieces
▪2 red bell peppers - cut into slices
▪10 cloves garlic
▪1/2 cup dry white wine
▪1/2 cup red wine vinegar
▪1 1/2 cups chicken stock
▪4-6 cherry peppers - quartered
▪1/2 cup parsley - minced
▪salt/pepper to taste
▪olive oil for frying
INSTRUCTIONS:
1. Toss the potatoes with a 1/4 cup of olive oil and season with 1 teaspoon salt and a 1/2 teaspoon of pepper. Roast potatoes for 30 minutes at 425f or until crisp.
2. In a large oven-safe pan sear the sausage links until brown (about 10 minutes total). When they are cool slice them on a bias and set aside.
3. Dry off the chicken pieces with paper towels and season with 1 teaspoon of kosher salt and a 1/2 teaspoon of black pepper. Sear the chicken pieces skin side down until well brown and crisp (about 5 minutes per side).
4. To the same pan add the garlic cloves and saute until golden, then add in the cherry peppers.
5. Add in the white wine, turn heat to high, and cook for 3 minutes to reduce.
6. Next, add in the chicken stock and vinegar and cook for 5 minutes more to continue to reduce the sauce.
7. Turn the heat to medium and add in the bell pepper strips. Toss to coat. Add in the sausage pieces and the chicken skin side up.
8. Cook the sausage and chicken for 60 minutes in the oven at 350f.
9. After 60 minutes add in the potatoes and return to the oven for 10-15 minutes more to heat the potatoes and bring it all together.
10. Finally remove from oven and add in the parsley and toss. Enjoy!
NOTE: If the sauce is too loose before serving, remove all the ingredients and cover with foil. Place the pan on high heat and cook to thicken and make the sauce stickier if required.
