Creamy Garlic Mushroom Chicken | One Pan Recipe!

This creamy garlic mushroom chicken recipe uses only one pan, is super easy and delicious, and uses no cream! It starts with well seasoned pan-seared chicken breasts and is finished with mushrooms, spinach, and garlic in a creamy white wine butter sauce. CREAMY GARLIC MUSHROOM CHICKEN
INGREDIENTS
2 pounds thin-sliced chicken cutlets
1 pound baby Bella mushrooms
3 cups baby spinach
1 cup low sodium chicken stock
¾ cup dry white wine - like pinot grigio or sauvignon blanc
5 cloves garlic - sliced
2 tablespoons cornstarch - mixed with 2 ounces water
2 tablespoons butter
salt and pepper to taste
1 cup flour - for dredging
3-4 tablespoons olive oil

INSTRUCTIONS
1. Pat dry chicken and season well with salt and pepper on both sides. Dredge the chicken in flour on all sides and shake off excess.
2. Heat a large skillet over medium heat. Add 1-2 tablespoons olive oil to the pan and once hot add the chicken pieces. Do not crowd the pan. Sear the chicken cutlets for 3 minutes per side then place in a plate lightly tented with foil. Work in batches and set all chicken aside.
3. Add the mushrooms to the pan and cook until browned (about 5-10 minutes). Once browned add the garlic to the pan and cook for 2 minutes more.
4. Add the wine to the pan and turn heat to medium-high. Add the chicken stock to the pan as well. Cook the sauce for 5 minutes to reduce.
5. If the sauce is very loose add in half of the cornstarch mixture to the pan and cook until thickened for 2 minutes. If still too loose add the remaining bit.
6. Once the sauce is thickened add in the chicken and the spinach. Cover and cook for 2-3 minutes to wilt the spinach and warm the chicken through.
7. Mix it all together and taste test. Add more salt and pepper if required (it will probably need more salt). When satisfied with the taste, turn off the heat and stir in the butter. Enjoy!

NOTE:
- Serve with crusty Italian bread to mop up all of the sauce.
- Chicken must be seasoned well. Chicken is bland without seasoning!
- Taste test the sauce and make final adjustments to salt and pepper to get the taste just right!
