How to Make Tempeh in the Instant Pot - Two Ways | Chickpea Tempeh + Cow Pea Tempeh

Unless you live in a warm climate, making your own tempeh can be tricky to master. Until now! Thanks to fullofplants.com, I discovered that I can use the "less" yoghurt setting on the Instant Pot. If you don't own one, you can also use your oven (just have the light on), or a dehydrator.

This recipe can be adapted for all different types of beans/grains/seeds/nuts, the only limit is your curiosity (and availability of ingredients). Just make sure that the beans/grains have chance to dry off after you cook them; wet ingredients = rotten tempeh.

NOTE - Using rice will give a slightly fermented/boozy flavour!

Chickpea Tempeh Ingredients:
200g (1 cup) Dried Chickpeas
90g (½ cup) Spelt (uncooked weight)
1 tbl Flaked Almonds
1 tbl Chia Seeds
1 tbl Sesame Seeds
1½ tbl Apple Cider Vinegar
2 tsp Tempeh Starter

Purple Tempeh Ingredients:
220g (1 cup) Cow Peas (uncooked weight)
90g (½ cup) Black Rice (uncooked weight)
30g (¼ cup) Pumpkin Seeds
1 tbl Black Sesame Seeds
1 tbl Nigella Seeds
1½ tbl Apple Cider Vinegar
2 tsp Tempeh Starter
