👉 Ingredients:
➡️ Measurements
Oyster mushrooms 300 gr
Shiitake mushrooms 200 gr
Garlic 10 gr
White onion 80 gr
Egg whites 2
Milk 3.25% 200 ml
Cream 35% 100 ml
Parsley 10 gr
Lemon zest 3 gr
Olive oil 30 ml
Salt, black pepper To taste
Soya sauce 5 ml
White wine 10 ml
➡️ For the Dough
Flour 200
Butter 100
Salt 6 gr
Vinegar 3 ml
Water 30 ml
Egg yolks 2
➡️ Method of Cooking:
✅ For the Dough
In a bowl, mix the flour with the salt. Add room temperature butter, egg yolks and vinegar. Start mixing the ingredients in the bowl until you have a rough dough. Then transfer the dough to a table and keep kneading it until you have a good dough. Place the dough in the fridge for half an hour to let it firm.
When ready, roll it and cut at the shape of the tart pan. Make a couple of holes, using a fork and blind bake for about 15 minutes at 170c or 340f. Then bake at 180c or 360f without the legume to give it colour for 5 minutes.
Let the tart crust chill completely before adding the filling.
✅ For the Mushrooms filling
Cut the mushrooms and onion. Refer to the video for the shapes. Heat a pan on the stove and add olive oil to it. Sauté the onions with crushed garlic to a golden colour and take them out to a bowl. To the same pan add the mushrooms with oil and sauté them as well for a couple of minutes. Add white wine and let it evaporate.
Then mix them with the onion and garlic and season with salt, black pepper, soya sauce, and lemon zest. Add also some finely chopped parsley.
Note: Keep some of the mushrooms before adding the wine as decoration for the final tart.
When the mushrooms and onion are chilled, add the milk, cream, and egg whites. Mix everything and pour it into the tart crust.
✅ Final Bake & Touches
Bake the tart in a pre-heated oven at 180c or 360f for about 15-20 minutes. You can check that the tart firmed by shaking it a bit and it is fluffy, it is ready. The post-chilling process will bring it to the exact point. Refer to the video for guidance.
Decorate with the sautéd mushrooms and parsley leaves.
