Whole Roasted Fish with white Wine,Tomatoes, & Fennel ThinkOFood

You can use any fish and roast it as a whole but I like the Sea bass as it reminds me Mediterranean flavours

👉 Ingredients:
➡️ Measurements
Sea bass 800 gr
Fennel 500 gr
Cherry tomatoes 250 gr
White wine 100 gr
Salt, Black Pepper To taste
Garlic 15 gr
Parsley 8 gr
Chili flakes 3 gr
Rosemary 3 gr
White onion 80 gr
Lemon 1 pc
Olive oil 80 ml


➡️ Method of Cooking:

✅ For the Cherry Tomatoes salsa

Cut the cherry tomatoes in half and slice the onion Julianne but not too thin. We still want to have a nice bite to it. Crush the garlic and chop it. Heat a pan to 8/9 and add the olive oil and onion. Roast and give a nice chard colour. Then add the cherry tomatoes and keep roasting.

Season with salt, chilli flakes, and black pepper. When the tomatoes are starting to get colour, add the wine and increase the heat to 9/9. Reduce until becomes a nice type of salsa/sauce. Let it chill and add lemon juice and chopped parsley.

✅ For the Whole Roasted Fish

For choosing the right fish I suggest referring to the video, where I explain the 4 steps on how to buy any fish not just for roasting. As for roasting it, pre-heat an oven to 220c or 430f top and bottom grill. Crush some garlic. Season the fish, garlic and rosemary with olive oil, salt, and pepper. Put the garlic with the rosemary in the belly of the fish.

Cut medium to large size batonnets the fennel. Cover a tray with foil and put the fennel on it. Season with olive oil, salt, and pepper. Then put the fish and make sure it is not touching the tray.

Roast for about 15-20 minutes, depending on the size and thickness of the fish. I did it 20 minutes with an 800 gr. Fish. In the middle of the roasting process, take the fish out and flip it to and roast it for the last 10 minutes. The fennel will create a free space to allow the heat to penetrate from under the fish and it will also absorb all the juices and flavours that are coming from the roasting process.

✅ Plating & Serving

I did not have the proper plate, but it still came out AMAZING. Place the cherry tomatoes on the bottom. Then the fennel and finally the Beautiful Whole roasted fish.

Decorate with some greens like fennel leaves or parsley and drizzle some olive oil. Serve with lemons or lime and let me know in the comments below what you prefer with your fish? Lemons or limes?
