👉Ingredients:

➡️ Measurements

Chicken breast (2 breasts) 400-500 gr
Tomatoes/ cherry tomatoes 120 gr
Sun-dried tomatoes (with the oil) 40 gr
Basil 3 gr
Cream 35% 300 ml
Salt, black pepper To taste
White wine 80 ml
White Chicken stock (optional) 120 ml
Yuka roots 600-800 gr
Oil for frying about 500 ml
Lime zest 3 gr
Parmesan 40 gr
Marinated Garlic (or fresh) 6 gr
Hot pepper 4 gr
Oil 15 ml


➡️ Method of Cooking:

✅ For Marinating the Chicken Breast

✅ For the Sauce

Cut the cherry tomatoes in half, slice the basil, and chop the hot pepper. Heat a pan on the stove (6 out of 9). Mix the cherry tomatoes with marinated garlic (or freshly chopped) and the sundried tomatoes (with some of the oil). When the pot is hot, add the tomatoes with the other ingredients and let them sauté for 2 minutes. Season with salt and black pepper.

When you see that the cherry tomatoes start to release their juices, you can add the white wine. Let the wine evaporate and then add the cream and the hot pepper. At this point, you can also add some white stock if you want. Let the sauce reduce on medium heat and then add the basil. Add the parmesan and then transfer to a tray to which we will add also the chicken.

✅ Roasting the Chicken Breast

When the chicken is ready to roast, pre-heat an oven to 180c (360f). Dry the chicken breast with a paper towel and season with salt and black pepper. Heat a pan with oil on the stove and sear the chicken breast until golden on both sides. I am doing it on 6 out of 9.

Then transfer the chicken breast to the tray with the sauce but try that the sauce would not touch the skin, so it will stay crispy. Bake in the oven for about 10-15 minutes, depends on the thickness of the breast. After baked, take out and let the chicken chill on a cutting board and then slice it. Put the sliced chicken back in the tray with the sauce and bake for another 2-3 minutes.
When the chicken is ready to serve, add parmesan on top and decorate with fresh basil.

✅ For the Yuca Frita

Peel and cut the Yuca into vegies. After cutting the Yuca into veggies, make sure you trim the sharp parts of the veggies. This sharp part is the middle of the Yuca and it is not eatable. Then place the Yuca veggies into salted cold water for about 20 minutes to allow them to bring some of the starchiness out and make the frying process much easier.

After the Yuca sat in the salted water, transfer it to a pot with the water and cook at a simmering stage for about 5-10 minutes (until the Yuca vegies are soft). Then strain them and leave them on the strainer to cool down before frying. Meantime heat oil to fry the Yuca, I am heating to 5/9 electric stove power. Fry the Yuca until is golden and nicely crunchy. Season with salt and lime zest.
