Smoked Mushroom Jerky fea. Mr Maitake as Hen of the Woods

Mushroom jerky is an incredible treat, most people can't tell it's not meat! I use wild Hen of the Woods (Maitake) but you can use any choice edible mushroom from the wild or store bought. The main thing about making any jerky, mushroom or meat is it's thinly sliced no more than 1/4" thick or it won't dry properly. I like mine dried to break crisp so it can be kept at room temp indefinitely but you can certainly dry it less if you refrigerate the finished jerky. Hen of the woods is my choice to use because it's very easy to find large amounts in season, tastes great & has numerous medicinal benefits. Talk about a healthy snack!

If you don't have a smoker a dehydrator works great or even an oven on its lowest setting with the door slightly open. Of course a smoker adds another level of flavor but it can be somewhat mimicked with liquid smoke used carefully. Marinade recipe, as you can see I wing it with what usually use for venison jerky but any jerky marinade will do. The most important thing is to precook the mushrooms by boiling for 10 minutes because no mushroom should be eaten raw!

A note to my fellow gourmet mushroom farmers. We all get excess mushrooms from time to time so this could be a great value added product to your business! It sure came in handy as I had lots of oyster varieties growing when the 2020 lockdown hit. What I couldn't donate to food banks or give away got turned into jerky & mushroom ketchup.
