THE JERSEY SUNSET🍸🏴☠️🍍
There’s a forgotten cocktail from the very last days before Prohibition.
It’s called the Jersey Sunset.
And to understand it, you need to know about one of America’s oldest and least-known spirits — applejack.
The story begins in 1698. A Scotsman named William Laird left the County of Fife and settled in Monmouth County, New Jersey. He brought one thing with him — distilling knowledge. And there was one thing growing everywhere around him — apples.
He started distilling them.
The result was a strong, golden brandy.
The Americans called it applejack.
By 1760, the spirit was so respected that George Washington wrote to the Laird family asking for their recipe. Robert Laird later served under Washington during the American Revolution. And by 1780, Laird & Company became the first commercial distillery in America — a title it still holds today.
Then in 1901, the Liquor Trade Review described a regional favorite — the Jersey Sunset.
Applejack.
Sugar.
Water.
Ice.
A few dashes of Angostura bitters.
As the bitters slowly mixed into the golden applejack, the drink took on the colors of a sunset over the Jersey shore.
A correspondent for the New York Sun called it “a feast for the eye, exceeded only by the exhilaration caused by this king of drinks.”
Then came Prohibition.
Cocktails went underground.
Applejack nearly disappeared.
And the Jersey Sunset was almost forgotten.
But Laird & Company survived, becoming the oldest active distillery in the United States — a title it still holds today.
A Scottish immigrant.
An American president.
An orchard of apples.
And a sunset in a glass.
