Green Turtle Cay. Bahamas. 1960s.
A rainy afternoon. The boys are playing dominoes in the yard. And inside, Miss Emily Cooper is mixing something new.
She passes a cup to her friend Brendal. He takes a sip. “Miss Cooper, that is very good.”
That’s how the Goombay Smash was born.
Miss Emily opened her Blue Bee Bar in 1957 on the tiny island of Green Turtle Cay — only accessible by ferry. No roads to the outside world. Just boats, locals, and the ocean. Word spread the old way: boat to boat, sailor to sailor. No internet. No marketing. Just one sip, and people came back.
Here’s the twist. Miss Emily never drank alcohol in her life. And she was allergic to pineapples — the key ingredient of her own creation. She invented a drink she could never taste.
The name came from a local Goombay Summer Festival happening in Treasure Cay at the time. Goombay itself is a centuries-old Bahamian music tradition — goatskin drums, dance, celebration. Pure Caribbean soul.
The recipe? Still a family secret. Three generations later, the Cooper family still runs the Blue Bee Bar and still won’t tell you.
Here’s the version most bartenders agree on:
— 1 oz / 30 ml coconut rum
— 1 oz / 30 ml dark rum
— ½ oz / 15 ml apricot brandy
— 3 oz / 90 ml pineapple juice (Dole only — Miss Emily was very specific)
— 1 oz / 30 ml orange juice
Shake with ice. Strain into a Collins glass over ice.
Garnish: maraschino cherry (optional)
Today, every bar in the Bahamas serves a version. None quite like the original. The Goombay Smash is widely considered the national drink of the Bahamas. And it all started on a rainy afternoon, with a woman who couldn’t even drink it.
