Summer Cheesecake by Larousse Cuisine
Ingredients :
40g Butter unsalted, melted
120g Digestive biscuit
For the cheesecake :
Juice of 1 lime
250g Cream cheese
100g Icing sugar
250 ml Double cream
For the topping :
100g Strawberries
50g Blackberries
50g caster sugar
100g Raspberries
100g Blueberries
A few sprigs of mint to garnish
