Ingredients :

100g Unsalted butter
300g Digestive biscuit
Butter for greasing cake tin

1 Vanilla pod
350g Cream cheese
100g Caster sugar
1 Egg

25g Corn flour
230 ml Double cream

100g Chopped pecans
100 ml Double cream
150g Unsalted butter
250g Soft brown sugar
100 ml water
150g Apricot jam
50g Caster sugar
A sprig of mint
Icing sugar for dusting
