For the cake:
1 Cup if cake flour (you can also use gluten free)
1 Teaspoon baking powder
1/2 Teaspoon baking soda
Pinch of salt
1 Teaspoon cinnamon
1/4 Teaspoon nutmeg
1/4 Teaspoon cardamon
1/4 Cup Muscovado sugar
1/3 Cup organic brown sugar
1/2 Canola oil
1 Teaspoon vanilla essence
1/2 Cup apple sauce
1/2 Cup crushed pineapple
1 Cup grated carrots
1/4 Cup coconut
1/2 Cup chopped pecans

For vegan fresh cream:
1/2 Cup non dairy cream
1/4 Cup powder sugar (icing sugar)
1 Teaspoon of freshly squeezed lemon juice
