養生紫米吐司Purple rice toast 柔軟到差點站不穩的麵包/Celia's kitchen每週更新食譜
1、吐司材料
高筋麵粉 279克
砂糖 27克
奶粉 10克
幹酵母 3克
常溫水 15克
冰水 142克
老麵 30克
鹽 3克
黑芝麻 20克
無鹽牛油 25克
熟紫米 150克
2、紫米50克加水450克浸泡1-2小時,煮至水乾米軟。
3、老麵:高筋麵粉125克、水75克、鹽1克、蜂蜜15克、幹酵母1克,全部混合,揉成光滑麵團,密封冷藏發酵12小時。

Dry yeast 3g
Warm water 15g
Ice water 142g
Old dough 30g
Salt 3g
black sesame 20g
Unsalted Butter 25g
Cooked Purple Rice 150克
2. Soak 50 grams of purple rice with 450 grams of water for 1-2 hours, and cook until the water is s dry and rice is soft.
3. Old dough: 125 grams of high-gluten flour, 75 grams of water, 1 gram of salt, 15 grams of honey, and 1 gram of dry yeast. Mix all together, knead it into a smooth dough, and let it ferment for 12 hours in a sealed refrigerator.
