These Potato croquettes are Perfect as an appetizer or as a side dish. Crispy on the outside, soft and cheesy on the inside, and are best served hot accompanied by mayonnaise or aioli dip and some slices of lemon and sprinkle with some shredded cheese on top.

Recipe for 25 croquettes
Ingredients:
2.20 lb (1 kg) of floury potatoes (we used King Edward but you can use Russet potatoes, Desiree, or Estima).
1 medium egg
1/3 teaspoon ground white pepper
1/3 cup (50 g) all-purpose flour
1/2 teaspoon of salt or to taste
1/2 tablespoon of lemon zest
1/3 cup (70 g) of sharp shredded cheddar cheese
5 oz (150 g) sharp Cheddar cheese Diced (1/2 inch - 12 mm)

to Coat:
3/4 cup (100 g) all-purpose flour
2 eggs, beaten
5 oz (140 g) Panko bread crumbs
Vegetable oil for frying

Directions:
Peel and simmer the potatoes in water until tender, it will take 15-20 minutes (depending on the size of the potatoes) then drain and let the potatoes slightly cool down then mash thoroughly with a potato ricer.

Add 1 egg, white pepper, 1/3 cup (50 g) of flour, salt, lemon zest, the shredded cheddar and beat at low speed with a hand whisk or mix with a wooden spoon until well combined.

Scoop about a big spoon of the mashed potato mix and after slightly flatten with your hand place a cheese cube in the center and enfold the potatoes around the cheese then shape into 25 round croquettes. Flour a cleaning kitchen counter and roll and flour the potatoes balls.

Roll the croquettes into the beaten egg and then through the breadcrumbs, making sure they are completely covered, and then place them on a big plate into the fridge to chill for about 15 -20 minutes.

In a medium-size frying pan, heat vegetable oil on medium-high heat to about 350°F.
(170°C - 180°C). Fry croquettes in batches of 4 or 5 at a time until golden brown, turning several times during cooking.

Using an oil skimmer strainer, remove croquettes onto paper towels to drain.
Keep them warm/covered in the oven at 150°F- 65°C until you are ready to eat them.

If you want a lighter version; you can also spray oil onto the croquettes with an oil sprayer and bake in the oven at 400°F. (200°C) for 10-12 minutes. They will be less colored yet very good.
These croquettes are best served hot accompanied by mayonnaise or aioli dip and some slices of lemon and sprinkle with some cheese on top.
