How to Cook Soya Sauce Seabass with Leeks

This is my mother-in-law’s recipe, introduced to me by my wife. She uses Pu Ning fermented soya beans sauce, which is my favourite fermented soya beans.

But I made a tweak to it and used oyster sauce as a substitute. I believe the umami is further eventuated. The leeks could be local ones of the giant Chinese leeks if you can’t find the local variety.

Simple to cook, and delicious. Great with rice or just plain porridge.
