How to Prepare Steamed Fish
My family and I love steamed fish as a centrepiece for our dinners, especially fresh red snappers, sea bass or pomfrets, done in the classical Teochew style of decorating with condiments like sour mustard aka 酸菜, dried or fresh shiitake mushrooms and tomatoes.
I would usually clean out the belly of the fish, remove any residue blood stains and load it with sliced ginger to take away the fishy smells. I would also add two sour plums. One placed strategically in the belly with the other outside just to sweeten the broth. No additional salt is needed.
Once the fish is properly defrosted, it takes ten minutes of steaming over high heat before it is ready for the dinner table. Easy. :)
