Sourdough Spelt Bread Recipe - Made Using the Scalded Flour Technique - Ancestral Kitchen Recipe

A big thanks to Alison Kay from Ancestral Kitchen for the inspiration and recipe shared in this video. I am not very experienced with the use of scalds in my whole grain sourdough recipes, but wanted to try it out after seeing and hearing about many of Alison's wonderful breads! Alison uses scalds and porridges in many of her breads and swears by them for improving the longevity and softness of her loaves (and the flavour too I'd say!).
