Ghapama by Maran

A delicious home-made traditional meal was prepared by Maran, and she shares her strategies on making Ghapama.

Ingredients for Ghapama:
-one medium pumpkin
-5 cups rice (pre-cooked)
-7 cups water
-1/2 vegetable oil
-2 tablespoons salt
-200g dry fruits (prunes, dry sour apricots, and raisins)
-salt (up to taste) you don't want it too bland or too salty! :)
-2 sticks of butter
-1/3 cup of honey
-200g walnuts

Prep for Ghapama (day before)
1) cut the pumpkin top at an angle that will later on close tightly
2) scoop out all the seeds from the pumpkin
3) from inside the pumpkin (half way up) poke the walls with a knife
4) rub 1 tablespoon of salt into the walls from the inside of the pumpkin

Directions for Ghapama (the day of)
1) the salted pumpkin has produced water that sits at the bottom of the pumpkin, which needs to be spilled out and cleaned with a napkin
2) the dry fruits with 50g of water needs to be steamed, after which add 2 tablespoons of vegetable oil
3) wash the 5 cups of rice; transfer onto the pot, and proceed to cook with 7 cups of water
4) butter up the pumpkin from the inside
5) open the pumpkin and layer it with rice, dry fruits and walnuts (little by little as shown in the video) until you reach the top
6) add 2 table spoons of butter to the top of the layers, and proceed to add the 1/3 cups of honey
7) when finished cover the top of the pumpkin with the lid that we cut out in the preparation process
8) wrap foil around the pumpkin from all sides
9) heat up the oven to 350 degrees in Celsius and leave the pumpkin in there for 1&1/2 hours
10) when finished take out the pumpkin, uncoil it, and proceed to cutting it up as shown in the video
