Summer evening call for light, fresh dinners. Luckily top lifestyle blogger Niomi Smart has rustled up the perfect salad day dish. Her zesty vegetarian fennel & orange salad is ideal for al fresco dining. And inspired by our Ethiopian Honey Deep Nourishing Mask, she’s paired it with a delicious honey and mustard dressing that makes healthy eating feel like a total treat. Here’s how to make it tonight:

Raw Fennel and Orange Salad with Honey and Mustard Dressing
Serves 2

What you’ll need:

- 1 fennel
- 1 orange, peeled and sliced
- 2 large handfuls watercress
- small handful fresh dill
dressing:
- 1 tbsp honey
- 1 tbsp mustard
- 1/2 orange, juice
- sea salt and pepper to taste

Method:
1. Place a handful of watercress onto a plate each. Slice the fennel into thin strips and place on top of the watercress.
2. Peel the orange and cut into thin slices, adding to the plate.
3. Make the dressing simply by placing all of the ingredients into a small bowl and use a fork to whisk it together. Drizzle over the plates and tear fresh dill over the top.
