The name BULERÍAS (flamenco subgenre, beginning of the 20th cent.) comes possibly from the Spanish word bulla, meaning “haste or fuss” or perhaps "mockery/joke", or bullería, meaning "racket, shouting, din". It is the style which permits the greatest freedom for improvisation, the metre playing a crucial role in this. It admits improvisations metrical and musical of all kinds, a versatility that is necessary to provoke its cheerful, fun and spontaneous character.
The ALEGRÍAS represent the most performed and characteristic example of the group of cantiñas (flamenco styles) of Cádiz. It seems that it is a form of singing (cante) and dance (baile) derived from the ancient folk music of Cádiz, that began to take shape when the city became a liberal redoubt against the advance of the Napoleonic troops. The word Alegrías literally means "joys". Songs about love, happiness can be found in the alegrías, bulerías and tangos.

Festival del Mostachon (Utrera) is named after the “mostachón,” a traditional pastry for which the town of Utrera is famous.
