NO GELATIN Agar Agar Island Cake | Ocean Cake | Cake trends 2020 | Halal Cake | Modelling Chocolate

Can't go to the beach then bring it to you!
I just had to try the trendy Island cake but we wanted to try something different. With august being the kids birthday month they too were keen on having a beach cake for their birthdays this time. So I thought what better opportunity to make it now.

First we wanted to create a beach from our hometown GOA.

Secondly..So far till date I have seen so many beautiful cakes made in Gelatine and as far as I know not everyone can eat gelatine so I thought I'd experiment with Agar Agar.( I couldn't find any vegetarian gelatine)Transparency wise..its not as clear as the Gelatine but it still does the job. I also added peels to the mixture which gave it a slight tint of yellow before I put the colour in. In one of my previous trials I attempted without any peels or flavourings and when turquoise was added it gave a beautiful colour. Flavourings are much worse. You end up having a cloudy jelly.

How to make the modelling choc 0:12

To make the modelling choc:

230g Dark choc
5 Tbsp Liquid Glucose or you can use Corn Syrup

To quicken the hardening of the modelling choc you can keep it in the fridge and check after 30 mins
To make the shells I added a tiny bit of dark choc to the white choc to give it a marbled effect. The shells were refrigerated and then brushed with cocoa butter.( I forgot to film that part)

The moss is just finely crushed digestives. I added Sugarflair Party Green to one and Holly Green to the other.

The Palm leaves which I absolutely hated because I had to improvise due to lack of time, they looked nothing close to real were made with wafer/rice paper. And then painted with an edible pen.

Plan your Island and work out. Always take off a little at a time. Hubby's an expert when it comes to carved cakes so the carving was all him. We used an 8"cake.

I applied the ganache and refrigerated it.

Same with the white choc and the cocoa butter.

Dust off any crumbs if at the bottom of the sea or they'll soak up and make the agar agar look cloudy.

I would have made the sea plants with modelling choc but since I was on a deadline with the birthday I couldn't be bothered and added what I had.

Add ganache on the edges of the sea so it sticks to the acetate and secures it. The ring (tin) wasn't needed but it was only put in to support the acetate. You can also add cling film outside the tin to make it more secure.

How to make Agar Agar Jelly 5:53

To make the Agar Agar Jelly:

750ml water
A couple of Orange and lemon peels for flavour
120g Sugar
1 1/2 tsp Agar Agar powder
Sugarflair Turquoise gel colour

I've made Agar Agar jelly so many times for the kids with fruits in it but never did I have lumps while making. the day I decide to film lumps decided to show up 🙄. But lumps or no lumps sieve the mixture at least 3 times.

Cool down the mixture till you can comfortably dip your finger. Too cold and it will set so you have to keep an eye on it. What I did was I took out about 3-4 ladles full, poured it into a separate bowl cooled it down and added it in to the cake. That way the mixture in the pan was still warm. So just take out what you need and leave the rest in the pan. If the mixture in the pan too feels like it going to set, heat it up again till slightly warm.
Add about 3 spoons and let set before you move on. You can even refrigerate it for a few mins. Agar agar sets very quickly. I didn't have to wait at all when it came to the setting.
Be careful while pouring the liquid not to pour on the moss. You can also do it the other way by adding the moss in the end after the jelly is poured.

Waves were made using the white icing colour.

I'm glad I had the time to experiment before I went ahead to make this cake. Its slightly tricky but it def turns out to be one of the most beautiful looking ones. Still hate the pam trees though 😑

The end clip is the actual Palolem beach in Goa.

I've tried to mention as many details as I can remember any thing that Ive missed I'll be back to pen them down later. At the moment I'm off to cut the kids birthday cake. 😘
