How to Make Great Pizza at Home | Tips on How To Stretch a Round Pizza | #pizza #pizzarecipe

Welcome to Cooking with @cheftuan Today I want to show you that you can make a great pizza in your home oven. No need to buy expensive outdoor ovens. There are only a few tools you will need. First off is a cast iron pizza pan. I have a huge fan of them. They conduct and hold heat better than a pizza stone and they are virtually indestructible. The second tool you will need is a pizza peel. You can get away with a wooden peel (which I prefer to use when launching the pizza) and a perforated peel.

Dough Recipe: makes four 245g doughballs
* 598 g bread flour (I use King Arthur)
* 347 g warm water (105F)
* 4 g instant dry yeast
* 17 g kosher salt
* 18 g olive oil
* 2 g honey
* 7 g diastatic malt powder

Steps:
1. Combine honey, warm water and yeast. Mix well and set aside.
2. Mix all the dry ingredients together.
3. In a stand mixer combine all the dry ingredients together and let mix for 3-4 minutes.
4. Remove from bowl and knead for about 1minute. I want you to get a feel for the dough.
5. Portion into 245g doughballs and shape into smooth round doughballs.
6. Place into a lightly greased container and cover.
7. Refrigerate for at least 24 hours up to 72 hours for optimal results.

When you are ready to bake, remove your dough from the fridge at least 2 hours before using. You need to let this come up to room temperature so it can stretch easily. Now stretch your dough according to my instructions in the video.

When baking this pizza, preheat your oven to the max 500 or 550 F with your cast iron pizza pan in the middle rack and you NEED your cast iron pizza pan to heat up to 530F before you launch your pizza. In my oven, this took 5 and a half minutes to cook. If you want, you can probably push it to 6 minutes.

Remove your pizza and rest on a wire rack for 10-15 seconds before placing on a pizza plate. This will help the steam escape and keep the undercarriage of your pizza as crispy as possible.
