Doubles Recipe | My Version of a Popular Dish in Trinidad and Tobago | Drunk Chicks Craft Sauces

Welcome to @cheftuan today I will be making my version of a popular dish from Trinidad and Tobago. I am not claiming this to be authentic but it's as close in flavor as I have come to make. If I have any friends from Trinidad and Tobago, feel free to let me know how I did!

I am using my favorite habanero pepper sauce from this new company based out of Orlando, FL called, Drunk Chicks Craft Sauces. They have a total of 5 different sauces available and you can order them here https://www.drunkchickscraftsauces.com

Bara (Dough Recipe makes 10):
300 g bread flour (I like using bread flour but you can sub with AP)
237 ml water
1 g sugar
4 g yeast
1 tsp ground cumin
1 tsp curry powder or turmeric
salt and pepper

Cucumber chutney:
1 English cucumber
6 leaves of culantro
salt and pepper
***there are a lot of Trini recipes out there that add scotch bonnets and more herbs to the recipe, I am keeping this pretty neutral because I want to let the flavor of the habanero pepper sauce I am using to shine through***

Chick Peas:
1 can chickpeas, rinsed
1 medium onion, diced
3 garlic cloves
1 tbsp curry powder
2 tsp ground cumin
salt and pepper
