Today I will be making my famous fried chicken. Let me show you how simple it is to make this delicious recipe. Now you CAN DEFINITELY make this recipe WITHOUT the Hestan Cue, but where's the fun in that? You just need to heat your oil to 330 F and use a candy thermometer.

I used 4 thighs and 4 drumsticks for this recipe.

Spice Rub: (can use for up to 12 pcs of chicken)
1 TBSP of each
* garlic powder
* onion powder
* chili powder
* dried mustard powder
* black pepper
* white pepper
* ground ginger
* paprika
* cayenne pepper
* kosher salt

2 Tbsp of your favorite hot sauce

Mix all the DRY ingredients in a bowl and mix.

Wet batter:
16 oz egg whites
1/2 C water
2 tbsp hot sauce (more or less depending on your preference)

Dry Dredge Recipe:
3 C all purpose flour
1 tbsp black pepper
1 tbsp white pepper
1.5 tbsp salt
1 tbsp paprika
