International Students Try Russian Food | Kholodets

In this episode of “International Students Try Russian Food,” Allison and Uğur try kholodets (aspic) – a curious savoury jelly made with pork, chicken, beef, and veggies. The word kholodets (or studen', as it's known up north) comes from the Russian word for "cold,'' as the very final step of its preparation is to chill it, allowing the natural coagulants found in pork tendons to turn a regular broth into a jiggly, transparent jelly.
