5 pinches salt (4g)
3 eggs
⅓ cup heavy cream
1 tsp baking powder

DIRECTIONS
1. Preheat oven to 350°F/177°C
2. Melt the butter in the heating oven or a microwave.
3. In a bowl, add the eggs, cream, corn extract, and mix well. Slowly pour in the hot butter while mixing so that it doesn't cook the eggs.
4. In separate bowl (or even in the same bowl), mix the almond flour, coconut flour, baking powder, allulose, and salt.
5. Mix the dry and wet ingredients and pour into a buttered 10" skillet, metal pan, or muffin tin (makes 10-11 muffins).
6. Cook in the oven for 25-30 minutes or until the top is starting to brown. If cooking muffins, 20-25 minutes should suffice.

1 jalapeno
1 tsp baking powder

DIRECTIONS
1. Preheat oven to 350°F/177°C
2. If you dont have bacon grease, place your raw bacon over medium low heat in a pan to begin rendering the fat.
3. Melt the butter in the heating oven or a microwave.
4. In a large bowl, mix the almond flour, coconut flour, flax meal, baking powder, allulose, and salt. Mix to combine.
5. In a seperate bowl, add the eggs, cream, corn extract, and mix well.
6. Once the bacon is cooked, set aside and pour the grease into a separate, heat-safe container. Add 3 tbsp of the bacon grease to the melted butter and mix until combined.
7. Slowly pour the bacon grease and butter mixture into the wet ingredients while stirring. Mix well to combine.
8. Slowly add the wet ingredients into the dry ingredients and stir with a spatula to combine. Set aside.
9. Slice the jalapeno very thinly and cook in the pan you used for the bacon. Cook until your desired level of brownness, then remove and add to the batter. Mix to evenly distribute.
10. You can make these in the skillet, but I prefer to make these in a muffin tin. Line your muffin tin with liners and evenly distribute the batter for as many muffins as you would like.
11. Cook in the oven for at least 20 minutes, adding 5 minutes at a time until your desired level of brownness. Muffins will take less time than cooking an entire pan.
12. Remove and enjoy!
