Savory Pancakes
Today I'm going to show you how to make savory pancakes with oats.
These healthy savory pancakes take only 15 minutes to make and you can enjoy them any time of the day.
These pancakes are super versatile and you can serve them with many different toppings.

SAVORY PANCAKES RECIPE
(makes 9 pancakes = 3 servings)
Ingredients:
1 cup ground oats, or oat flour (100g)
1 tbsp tapioca starch, or cornstarch
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp black pepper
3/4 cup Greek yogurt, strained (190g)
1 egg
1/4 cup applesauce (65g)
1/2 tsp dried thyme
1/2 cup cheddar cheese, grated (50g)
1/2 cup corn, canned or frozen (65g)
NUTRITIONAL INFO (per serving):
298 calories, fat 10.6g, carb 33.6g, protein 17.3g
Preparation:
In a bowl whisk together Greek yogurt, egg, applesauce and dried thyme.
In separate bowl add the ground oats, cornstarch, baking powder, baking soda, salt and black pepper, and whisk well.
Add the dry ingredients into the wet and gently fold in, just until incorporated. Set it on the side, while you grate the cheese.
Stir in the grated cheddar cheese and corn (frozen or canned).
Heat up a non-stick pan over low heat and brush with a little bit of olive oil.
Spoon the batter into the pan (about 1/4 cup) and cook the pancakes for 2 minutes on each side.
Eat alone or serve with fried egg, salad or grilled chicken.
Enjoy!
