Easy Baked Tuna Meatballs

In this video I'm going to show you how to make canned tuna meatballs.

This is a great way to use canned tuna that's not a tuna salad. With a few simple ingredients you can make these healthy meatballs in 30 minutes.

First, I'll show you how to make tuna meatball mixture from scratch. and have them soft and tender (not mushy) every time.

Finally, I share with you three different ways you can serve these tuna balls. They're so easy to make, and you can have it done while meatballs are baking.

First, you can make 10 minute tomato sauce (note: extra amount of olive oil gives this sauce an amazing texture). Next, you can whip up a quick sweet and sour sauce. The base for this sauce are tomato paste, honey and apple cider vinegar. All you have to do is to mix the ingredients together. And finally, pesto and ricotta sauce. Same thing here, you just have to bring together your favorite pesto and fresh ricotta cheese.

TUNA MEATBALL RECIPE
Ingredients:
For tuna meatballs:
3 cans tuna, drained
1 egg
1/2 cup quick oats
1/2 cup Parmesan cheese
1/4 cup chopped parsley
zest of 1 lemon
2 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper

For tomato sauce:
1 (14 oz) can crushed tomatoes
2 cloves garlic, thinly sliced
1 sprig fresh basil
salt and black pepper, to taste
1/4 cup olive oil

For quick sweet and sour sauce:
1/2 cup tomato paste
1/4 cup honey
1/4 cup apple cider vinegar
1/2 tsp red pepper flakes
salt, to taste

For pesto ricotta sauce:
2 tbsp green pesto
4 tbsp ricotta cheese

NUTRITIONAL INFO (per serving):
292 calories, fat 11.9g, carb 7.6g, protein 37.6g

Preparation:
Drain the tuna to remove any excess oil or water.

In a large bowl, flake the tuna with a fork. Add all other meatball ingredients, and mix well to combine. Let it rest for 10 minutes.

Using your hand shape the mixture into a walnut-sized balls.

Line the meatballs on the baking sheet and bake for 20 minutes at 400 degrees.

For tomato sauce, heat olive oil in a large pan over medium heat. Add the garlic, and cook for 30 seconds. Pour in the tomatoes, and add the basil. Season with salt and black pepper. Bring to a boil, lower the heat and cook gently for 10 minutes.

For quick sweet and sour sauce, in a bowl, mix all the ingredients together. No cooking needed.

For pesto and ricotta sauce, in a bowl, spoon your favorite basil pesto (or any other green pesto), add double the amount of ricotta cheese and mix until well combined.
